●SIMMERED MACKEROL TOPPED
WITH GRADED WHITE RADISH

<Ingredients(for four)>
1 (upper half of)mackerol
flour
8 shiitake mushrooms
2 spring onions
1 1/2 cups grated white radish
simmering liquid
1 1/2 cups nibandashi
2 tablespoons mirin
2 tablespoons sugar
4 tablespoon light soy sauce
frying oil
1)Slantingly cut the mackeral and dust with four.
Do not dust excessive
amount on the fish.
2)Heat the frying oil to about 170 degrees celcius and
fry the shiitake
mushrooms. Then fry the mackerel.
3)Prepare the simmering liquid in a pan and let it simmer
once then add
the grated white radish and spring onion which are also
thinly sliced
slantingly. Turn off the heat when it comes to a boil
again.
4)Pour a liberal amount of the simmering sauce with the
grated white radish
on the fried mackerel which is assembled on a plate.
